Research 
Characterization of anthocyanins from selected wild edible fruits from northeastern Uganda
 
Identified and isolated anthocyanins from three wild edible fruits out the many screened. Anthocyanins are water-soluble plant pigments which are responsible for various colors ranging from salmon pink through red and violet to the dark blue of most flowers, fruits, leaves, stems and other plant storage organs. Anthocyanins, which have considerable potential as food color additives in the food industries and as colorants for pharmaceutical products, are also antioxidants.
 
Work Plan:
  1. Domestication and conservation of these plants which produce fruits that can be used as nutraceuticals.
  2. Applications of these characterized anthocyanins in food, beverages and pharmaceuticals.
